I have a question. It's kind of a stupid question, but oh well.
January is about ice or snow, but how direct does that have to be? Like does it have to be about actual ice or actual snow? Or do one of the words just merely need to be used? And can they be used metaphorically, or in a simile?

So mentioning the words ice and snow without having them be the centre of the poem will be ok?

I have a suggestion. Why don't one month we make the theme a sort of alphabet game, where each line of your poem, or each sentence in your story, must start with A, and then proceeding to B, C, D...etc. Until you get to Z and then you finish your poem/story.
