I use anything and everything for web design. I'm a Mac user primarily, so I usually stick to TextEdit or Dreamweaver when I'm willing to put up with it's nuances. If I could find a copy of Zend for Mac I'd use that, being that I'm a PHP/MySQL advocate and all. I design in Photoshop, no Fireworks (I can't believe anyone uses that, to be honest).
As for photography, it really depends on what I'm doing. I almost always end up retouching it in Photoshop (contrast adjustments, lighting, levels, color balancing, etc.). Beyond that, I don't really do much unless it's a sort of abstract project combining several images for... whatever purpose.
